π§βπ³ This super healthy pumpkin pudding makes a delicious anytime snack. Itβs also great for refueling after a workout.
You can make up a batch ahead of time, so they are ready to go whenever you need a sweet(ish) treat β top with walnuts just before serving.
Pumpkin-Vanilla Pudding
(Serves 1)Β
- 6 oz (170 grams) nonfat Greek yogurt
- β cup (80 grams) 100% pumpkin puree
- Dash of cinnamon
- Splash of vanilla
- 1 tsp maple syrup or honey (to taste)
- 1 Tbsp toasted chopped walnuts
Combine the yogurt, pumpkin, cinnamon, vanilla, and maple syrup in a small bowl and mix until well combined. Top with the walnuts. π
