(Makes 4-6 servings)

โ— 1 lb. (455 g) lean ground meat (beef, chicken, turkey -OR- extra-firm tofu, cut into cubes)
โ— 1 Tbsp extra virgin olive oil
โ— 2 Tbsp taco seasoning
โ— โ…” cup (155 ml) water

โ— 2 cups (300 g) cherry tomatoes, cut into quarters
โ— 1 jalapeno, chopped (remove seeds for a milder salsa)
โ— ยผ cup (30 g) red onion, chopped
โ— 1 lime, juiced
โ— ยฝ tsp sea salt
๐๐จ๐ฐ๐ฅ ๐ˆ๐ง๐ ๐ซ๐ž๐๐ข๐ž๐ง๐ญ๐ฌ
โ— 2 cups (190 g) cooked rice (brown, jasmine, cauliflower, etc.)
โ— 15 oz (425 g) can of organic corn, rinsed & drained
โ— ยฝ cup (60 g) goat cheese crumbles (optional)
๐๐ซ๐ž๐ฉ๐š๐ซ๐ž ๐ญ๐ก๐ž ๐๐ซ๐จ๐ญ๐ž๐ข๐ง:
Heat 1 Tbsp olive oil in a medium skillet over medium heat. Add the ground meat or cubed tofu, breaking it up with a fork or cooking utensil as it cooks. When cooked through, stir in the taco seasoning and water. Let simmer for 2-3 minutes until the sauce thickens. Remove from heat and set aside.
๐๐ซ๐ž๐ฉ๐š๐ซ๐ž ๐ญ๐ก๐ž ๐’๐š๐ฅ๐ฌ๐š:
Combine the salsa ingredients in a medium bowl and mix well.
๐€๐ฌ๐ฌ๐ž๐ฆ๐›๐ฅ๐ž ๐ญ๐ก๐ž ๐“๐š๐œ๐จ ๐๐จ๐ฐ๐ฅ๐ฌ:
Divide ingredients evenly between 4 to 6 (depending on serving size) meal prep containers.
โ— Taco-seasoned meat/tofu
โ— Salsa
โ— Rice
โ— Corn
โ— Sprinkle of goat cheese crumbles
Cover tightly and store in the refrigerator for up to 4 days. Can be eaten cold or reheated. Tip: donโ€™t add the salsa until just before you eat/after you reheat it.
